Lazy Man’s Cabbage Rolls

This is the name for a casserole that apparently lazy people make when they want the taste of cabbage rolls, without the hassle of rolling them up. I informed my family that I was going to make them for dinner tonight. Chris said “yeah!!!”….Ms. A said “ugh, mommy!”….Big D didn’t have a clue as to what was coming. So, Ms. A had a friend over this afternoon and the hours went by and they decided that neither of them liked the menu option and that the friend would be going home for dinner. I said, whatever, Ms. A would still be eating the casserole. Well, as the time to go home got closer, their attitude changed. I suppose when the want for the friend to stay over supercedes the dislike for the food, minds change. So, friend and Ms. A sit down at the table for dinner. They start eating and continue eating till 2 plates full each are finished and fingers are licked. Guess they liked it after all that drama. Big D wasn’t a big fan of the casserole…..but he has really started being picky in his likes and dislikes so I’m not altogether surprised. Chris ate a HUGE plateful and licked off the serving spoon after. I LOVE lazy man’s cabbage rolls, they are simple to make, taste great and are great leftovers. Oh, the things that make me happy these days! LMAO!

    Hahaha! I didn’t think anyone…..let alone “all” of you would want the recipe….after all I think there’s only like 2 people who are even reading this blog…..lol !!!

    Lazy Man’s Cabbage Roll Casserole

    1 head of cabbage
    6 servings of cooked rice (Uncle Ben’s measurements)
    1-2lbs of ground beef (I just buy whatever package I can find at the grocery store)
    1/2-1 pkg of bacon (more or less depending on your love of bacon)
    Salt and Pepper
    1 large can of tomato juice

    Fry ground beef and bacon (together or seperately doesn’t matter). Mix rice and add salt and pepper to taste. Chop cabbage into 1 inch size pieces. Layer rice/groundbeef/bacon mixture with cabbage into a casserole dish. Pour tomato juice over the top until juice just covers the top layer. Cook at 350 for 1.5 hrs. (you can test if it’s done before that by sticking a knife in and seeing if the cabbage is soft)

    Enjoy….but be careful, it’s hot when it just comes out! lol
